Assistant Professor in Meat Science

Position Summary

The Assistant Professor in Meat Science will develop a high-impact nationally recognized meat research and extension program to address the critical issues in relevance to the meat industry.

This position is 12-month, non-tenure track with responsibilities of approximately 80% research and 20% extension.

Essential Functions, Duties, and Responsibilities

• Develop research and extension program to address critical and emergent issues in the meat industry.
• Conduct innovative lab and field research and outreach activities.
• Write grant proposals for funding to support research and extension activities.
• Publish research findings in peer-reviewed journals.
• May be required to teach courses relevant to their expertise, and supervise graduate students.

Knowledge, Skills, and Abilities

• Demonstrated ability to conduct quality research, teaching, and extension activities, publish research articles, and secure extramural funding.
• Expertise and experience in meat animal growth, carcass evaluation, meat lab supervision, and field workshop management.
• Excellent verbal and written communication skills.
• Familiarity in meat food regulations, standard operating procedures.
• Willingness and ability to work in a team-oriented environment with diverse group of faculty.

Education and Experience

• Ph.D. in meat science, meat processing, muscle biology, animal production and protein food chemistry, or a closely related field is required.
• Experience of postdoctoral meat research and teaching is preferred.

Physical Requirements

• Ability to lift and carry up to 50 lbs.
• Ability to restrain and handle livestock.
• Ability to operate and drive farm equipment.
• Possible exposure to chemicals, animal wastes, allergens, and zoonotic agents.
